Ingredients
12 oz rotini pasta
2 cups cooked chicken breast, sliced or shredded
1 cup cherry tomatoes, halved
1 cup cucumber, chopped
1/2 cup orange or yellow bell pepper, sliced
1/2 cup red onion, sliced thin
1/2 cup shredded carrots
1/3 cup chopped fresh parsley
1/2 cup Italian dressing or pesto vinaigrette

Instructions
Step 1: Cook the pasta according to package directions until al dente. Drain and rinse with cold water to cool.
Step 2: In a large bowl, combine the cooked pasta, chicken, cherry tomatoes, cucumber, bell pepper, red onion, carrots, and parsley.
