Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup packed brown sugar
2 large eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt

1/2 cup granulated sugar (for rolling)

Instructions:
Step 1: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Step 2: In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Add eggs and vanilla; mix until combined.
Step 3: In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
Step 4: Scoop about 1 tablespoon of dough, flatten slightly, and wrap around a Rolo candy. Roll into a ball and coat in granulated sugar.
Step 5: Place the dough balls 2 inches apart on the prepared baking sheet.
Step 6: Bake for 7–9 minutes, until the edges are set. Do not overbake. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Storage Information:
Store Rolo cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze baked cookies for up to 2 months. Reheat slightly for that gooey center!
