Step 1: In a mixing bowl, whisk together cottage cheese and eggs until well combined.
Step 2: Add flour, sugar, baking powder, salt, and vanilla extract. Stir until a thick batter forms.
Step 3: Heat a non-stick skillet or griddle over medium heat and add a little butter or oil.
Step 4: Scoop batter (about 1/4 cup per pancake) onto the hot skillet. Cook for 2–3 minutes on each side until golden and set.
Step 5: Repeat with remaining batter. Serve warm with toppings like syrup, fruit, or yogurt.
Storage Information
Store leftover pancakes in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or toaster for best texture. They can also be frozen—layer with parchment and store in a freezer bag for up to 2 months.
