Blueberry Oatmeal Crumble Bars

Instructions

Step 1: Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper, leaving an overhang for easy removal.

Step 2: In a medium bowl, mix together the oats, flour, brown sugar, salt, and cinnamon. Add the melted butter and stir until crumbly.

Step 3: Reserve 1/3 cup of the crumb mixture for the topping. Press the remaining mixture firmly into the bottom of the prepared pan to form the crust.

Step 4: In another bowl, combine the blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir gently until the berries are evenly coated.

Step 5: Spread the blueberry mixture evenly over the crust, then sprinkle the reserved crumb topping over the berries.

Step 6: Bake for 35–40 minutes, or until the topping is golden and the blueberry filling is bubbling.

Step 7: Allow the bars to cool completely in the pan before lifting out and slicing into squares.

Storage Information

Store the blueberry oatmeal bars in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days. For longer storage, freeze the bars in a single layer and thaw as needed.
