Ingredients:
1 tablespoon olive oil
1 lb Italian sausage, casings removed
1 small onion, diced
2 cloves garlic, minced
2 medium carrots, diced
4 cups chicken broth
1 (9-ounce) package refrigerated cheese tortellini
3 cups fresh spinach
1/2 cup heavy cream
1/4 cup grated Parmesan cheese

Instructions:
Step 1: Heat olive oil in a large pot over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and fully cooked. Remove excess fat if needed.
Step 2: Add the diced onion, garlic, and carrots. Sauté for 5–6 minutes, until the vegetables are softened.
Step 3: Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
Step 4: Stir in the tortellini and cook according to package instructions, usually about 5–7 minutes.
